Western Baked Dijon Salmon

I'm a fitness freak, that makes me want to eat clean and healthy, meaning lesser bad carbs but not totally no fats. I indulged myself with food like french fries or fried chicken on some occasions. I don't believe in total obsession in something, it is important to listen and understand what your body needs. Salmon is a protein-high food, great for people who workout or want to eat clean. 


Ingredients:
  • 3 tbsp butter or margarine, melted
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/4 cup bread crumbs
  • 1/4 cup finely chopped pecans
  • some chopped fresh parsley 
  • 2 fillets salmon
  • salt and pepper to taste
  • 1 lemon, for garnish



Directions:
  1. Preheat oven to 200 degrees C
  2. Stir melted butter, mustard and honey together in a small bowl. Set aside
  3. Mix together bread crumbs, pecans and parsley
  4. Wash and towel dry salmon fillets. Lay them on a baking tray with baking sheet underneath
  5. Brush each salmon fillet with honey mustard mixture, sprinkle tops of fillets with bread crumb mixture
  6. Bake salmon at 200 degrees C for 12 to 15 mins in the preheated oven( depends on how well done you prefer, may have to check from time to time)
  7. Season with salt and pepper, squeeze generous amount of lemon juice 
  8. Garnish with a wedge of  lemon  

Tada!!! Beautifully baked breadcrumb with medium done salmon!!!



Best served with spinach cooked in butter and sea salt with a dash of pepper
