咸蛋魷魚蒸肉餅 Steamed pork with squid and salted eggs


Normally you find either minced pork with salted eggs or minced pork with squid, however I'm going to combine both in one. If you don't like salted eggs or squid, then just omit anyone but the method and ingredients will be the same.  


Ingredients:
  • 400g minced pork
  • some fresh squids (minced)
  • 2 salted duck egg-yolk  
  • 1 tbsp of salted egg-white 
  • 1/2 tsp of salt
  • 1/4 tsp white pepper
  • 1 tsp of light soya sauce
  • 1 tbsp of cornstarch
  • 1 tbsp of cooking oil
For topping sauce before serving
  • 1 tbsp of sesame oil
  • 1 tbsp of light soya sauce
  • 1 tsp of sugar
Preparation method:

  1. Marinate the minced pork with salt, white pepper, egg white, light soya sauce and cornstarch.
  2. Add cooking oil and minced squid and mix well. 
  3. Shape it to a flat round cake and place on a round safe heat plate.
  4. Cut egg yolk into half and distribute and press them evenly on the patty 
  5. Steam the patty for 20 mins over medium heat until it is thoroughly cooked
  6. Remove and do the topping sauce 


*Easy version of top sauce is just to mix sesame oil with light soya sauce and sprinkle on top of the cooked patty. Garnish with spring onion. Otherwise, do the below procedure if sufficient time. 

Topping sauce:
  1. Oven heat or pan heat the light soya sauce till warm 
  2. Add in sugar and stir till dissolved
  3. Mix sesame oil into the sauce and pour all over the cooked meat patty
  4. Garnish with spring onion and serve hot

*You may transfer patty to a nicer plate but do also keep half the meat essence from the steaming plate as it will help to moist the patty even if re-heat in oven.
