Century Egg and Coriander Soup (皮蛋芫荽汤)

 

I was supposed to study for my annual refreshment course for emergency and first aid license which I hated so much, so I took some time off to cook my fave soup. It is simple, easy and quick!!! I know you must be thinking what a weird soup combination with century eggs and coriander. It may look or sound unappealing but trust me the coriander isn't that obvious in soup, in fact it brings the sweet natural aromas. I was skeptical  initially especially with the color of the soup, 'greenish mud' color like those you saw in alien movie!!! Haha! How can it taste any better than it looks!! To my greatest surprise, it tastes heavenly good!! A new experience to my taste bud!! It is pointless for me to elaborate more on the deliciousness of this pleasant refreshing aromatic soup till you try it yourself. Let's begin!! Fyi, this soup has cooling effects which is good for summer.

All you need 
A bundle of coriander
4 century eggs 
Sea salt 
Water 3/4 filled in a pot


Direction
Wash the coriander thoroughly and cut off the roots
Peel off the shell from eggs n cut in wedges 
Bring a pot of water to boil in high heat
Once boiled, bring in both preserved eggs and coriander 
Simmer in low heat till the soup turns greenish ;)
Stir a few times while simmering 
Sprinkle a pinch of sea salt 
Stir to taste ( add more for taste)
