Egg tofu with minced pork/ seafood

Today is a "SLOW DAY" !! Meaning everything is in a slow mode. I am feeling restless lazy and tired from gym and study. This egg tofu dish is rather simple and similar to hot plate tofu just that I was too lazy to transfer to a hot plate. It looks complicated but I took less than 15mins to cook this dish.

Ingredients:

-2 tubes of egg tofu
-some mixed beans

-150 Ib of minced pork ( alternatively replace with small shrimps)
-cornstarch flour
-oyster sauce
-salt
-sesame oil
-light soya sauce
-coriander or spring onion
-2 gloves of garlic-minced

Method:

Marinate minced pork
-with half teaspoon light soya sauce n half teaspoon of sesame oil.

Egg tofu

  1. Cut tubes in half n squeeze out the tofu
  2. Cut into 6 to 8 thick portions per tube
  3. Mix a generous amount of cornstarch with a pinch of salt
  4. Then coat tofu cake with salted cornstarch
  5. Heat half cup of oil in fry pan
  6. Fry tofu till golden yellow
  7. Drip dry and prep-late on a serving plate

Toppings with sauce
  1. Stir fry some minced garlic with 1 tablespoon of cooking oil over medium heat
  2. Pour in minced pork or small shrimps
  3. Stir fry for a while before adding in mixed beans
  4. Ensure mixed beans are almost cooked
  5. Add one cup of fish stock soup (魚上汤)and 11/2 tablespoon of oyster sauce
  6. Bring up heat to high
  7. Thicken the sauce by slowly adding in cornstarch water (2 tablespoon of cornstarch little warm water to dissolve)
  8. Taste the sauce

Now the sauce is ready, you may set aside till your guests are all at table. You may reheat the sauce and pour over preplated tofu.
Garnish with chopped spring onion or coriander.

I prefer seafood shrimps than minced pork but unfortunately my house ran out of shrimps so pls try out either one and hope you like this egg tofu dish!
