Thai cooking recipe 1: Stir-fried Chicken with Cashew nuts "Gai Pad Med-ma-muang"

For the whole entire day, I 've been repeating YouTube video of  the song "Feel" by Robbie Williams, the sexiest man on earth and of cuz singing along with him!!! Awwwwww...dreamer's speech.
Haiz! In the background sat my daughter, Siara, live-chatting with her friend on her laptop discussing about their homework. She shut me off by commenting on my extraordinary talent in singing and that her friend could hear my beautiful hoarsely voice. O-hail-o-no!!! "My love, you should be proud of your mom in any way and every way!!"  Let me start playing my "er hu" what I called a Chinese violin and support my sayings by....

Why your mom was your first friend and your best friend for life!!
  • She was the one who walked into that atas school of yours and confronted your shocking elementary school principal (who thought  I looked more like a sister than a mom), when you were bullied by a group of girls who are wealthily spoiled by their parents.
  • Why do you think a tall 30ish old adult indulged in your childhood Disney obsession, hunting down a space ranger from the movie " Toy Story" when she flew to States.
  • She's the one who wakes up at 6:30am just to nag at you reminding you to wear sweater, bring umbrella or tissue before you vanished out of the house for your school bus.
  • She cares about your appearance more than you do
  • She'll celebrate your birthday more than her own
  • She'll listen to your petty problems and then give it to you straight
  • She crawls to your bedside every nite, smells your smelly feet before kisses you goodnite
  • She takes photo of you and admires you like a die-hard fan
  • What you see in her eyes is only love and love and love

Lastly and most importantly you inherited half of her genes!!!
Ok end of my grief! Here's the recipe!               



Ingredients: ( per person serving)
50grams chicken fillet- cut into small pieces
2 tbsp- plain flour
2 tbsp-cashew nuts, roasted
2tbsp-dried chilli, cut into 1 cm segment
20 grams pepper capsium- cut into bite size
20 grams onion-cut into bite size
1 spring onion-cut into 2cm segment
3 tbsp-stock/broth water
Vegetable oil except olive or grapeseed oil

Sauces
2 tsp- thai chili paste
1 tbsp- oyster sauce
1 tsp-sugar

Method:

  1. Coat chicken pieces with plain flour(shake out excess flour) 
  2. Deep fry medium heat until golden brown (do not stir when deep fry)
  3. Set aside
  4. Over medium-high heat, stir fry pepper/capsicum, onion with veg oil 
  5. Pour in the broth water
  6. Add in seasoning: Thai chili paste, oyster sauce,sugar and mix them well 
  7. Lower the heat down
  8. Add fried chicken, fried dried chili, cashew nuts, spring onion 
  9. Stir well and serve ( do not stir too long otherwise not crunchy)    
            

For children, you may like to leave out the chili paste part or add in chili part after you take out some for your children.
