Pepper salt deep fried calamari


Recalling back those days in Cairns...
blue clear sky, white cotton clouds, greenish blue sea, the Great Barrier Reef exploring the largest coral reef, enjoying the fresh seafood relaxing in the breeze, mouth-watering crispy fried calamari, fish n chips, mussels and clams, oysters and other seafood with a beer or wine on the side. That's what I called a real vacation away from busy stressful life. Anyway, I never missed those fried calamari whenever in Cairns. For those who don't bother to use buttermilk as a part of ingredients like me, this is a simplified recipe which tastes equally good.

Ingredients 
-Calamari 
-Pepper salt or white pepper and salt
-A dash of sea salt
-Fried flour ( I'm using the fried chicken powder-flour)
-One beaten egg



Methods:
-Wash calamari with some flour and slice thickly
-Marinate with little pepper salt and a dash of sea salt
-Beat an egg and dip calamari in
-Then coat it generously with flour 
-Heat oil in a frying pan using medium heat
-Once oil is hot, fry calamari till golden brown 
-Drip dry fried calamari on a kitchen towel
-Serve with lemon and mayonnaise on the side as condiments 

*Do not squeeze the lemon juice till ready to eat as it will affect its crispness.
