Red ruby Thai dessert- "Tab Tim Grobb"

Tab Tim Grobb is a Thai dessert, which is also known as water chestnut in coconut milk serve cold with some crushed ice.
Jackfruit can be added to complement the chestnut.

When I was young, my grandma used to make this for me as a treat and I always think of it as a Chinese dessert. I only realise that it's a thai dessert when I am a teenager.  
One of my regrets in life is I didn't manage to 'steal' a lot of secret recipe or learn a lot of dishes from my grandma who was a great chef and could whip up all sort of yummy dishes. 

Ok, back to the Thai red ruby that I so glad I managed to learn during our Bangkok cooking Trip

INGREDIENTS (per 1 serve)

30 grams water chestnuts (peeled, diced & boiled for 10 min.)
2 tablespoons red colour grenadine or cordial
2 tablespoons tapioca flour
2 cups water for boiling

INGREDIENTS FOR COCONUT MIXTURE
1/2 cup coconut cream
A pinch of salt
1-2 pandanus leave (tear into small pieces to release aroma)

*  Boil in a saucepan over medium heat.
   Keep stirring to prevent oil from separating then set aside.


(If you really can't find coconut milk or cream, just use full cream milk as that's what my daughter did )


INGREDIENTS FOR SYRUP 
1/2 cup sugar 
1/4 water
1-2 pandanus leave  (tear into small pieces to release aroma)

* Boil over saucepan over low heat for 15 min. 
  Do not stir ( so that sugar will get stick n burn at the side)



METHOD :

1. Soak diced water chestnuts in red grenadine for at least 1 hours.
2. Transfer dried colored water chestnuts into a bowl of tapioca flour and rolls them to coat well.
    (Scoop coated water chestnuts with hand and shake to remove excess flour)
3. Boil water to full boil and add coated water chestnuts. (Do not stir)
4. Wait till water is boiling again and water chestnuts start to float to surface then transfers them into a    
    bowl of ice water.
5. To serve, drain water chestnuts well and serve in a dessert bowl top with sugar syrup and coconut 
    mixture. Serve cold with some crushed ice.
    ( adding sliced of jackfruit will make this dessert even nicer 😋)
