鍋貼豆腐 Chinese restaurant fried tofu


Went to a Szechuan restaurant last weekend, ordered a delicious fried tofu dish. That waiter who was serving our table, look taken aback when he saw me tasting the sauce in a very serious way as if the food tastes stale or bad. Hahah...Anyway, I finally figured out how I can cook that same dish again.

The picture on the right shows the fried tofu served in the restaurant. Beautiful huh! Taste fabulous too!!

Ingredients:
  • beancurd for frying ( not the steam type)
  • 3 tbsp seafood soy sauce ( you may use other type of soya sauce but this is closest to restaurant's taste)
  • 1 cup chicken stock soup ( 1 tsp of chicken stock powder in water)
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • one beaten egg
  • baking flour
  • little cornstarch flour mixed with water ( to thicken the sauce)
  • mushrooms soak in water ( optional)
  • spring onions and coriander, for garnish




Directions:
  1. Cut tofu in a rectangular shape shown in pic
  2. Coat tofu with flour, then egg and back to flour again. 
  3. Fry tofu in medium heated oil till golden brown. Set aside
  4. Pre-plate nicely on a plate
  5. Garnish with  lots of spring onions
  
Let's do the sauce:
  1. Mix chicken stock with water
  2. Heat up mixture in a pan
  3. Add in mushrooms
  4. Add seafood soya sauce, oyster sauce, sugar
  5. Taste to see if additional soya sauce or water needed ( depends on your preference, salty or plain)
  6. Lastly add cornstarch water to thicken the sauce

Pour sauce over pre-plated fried tofu and you will get this! Top with coriander and serve

This light and simple tofu is great for elderly at home.
