CEREAL BUTTER PRAWNS (麦片虾)


Cereal butter prawn is also my one of my favourite dish. Instead of waiting to go back Singapore for that, I decided to learn how to cook. It's quite simple and straight-forward.   

Cereal mix preparation:
¾ cup Nestum cereal 
original flavour)
½ tsp salt
1½ tsp sugar
1½ tbsp milk powder
 

Ingredients:
medium size prawns( wash n dry thoroughly)
1 tsp salt
½ egg, beaten
1½ tbsp plain flour
vegetable oil for deep-frying
30 g unsalted butter (2 tbsp)
1 small chilli, thinly sliced
6-10 sprigs curry 




 Methods
  1.  Thoroughly stir ingredients for cereal mix. Set aside.
  2.  Sprinkle prawns with salt. Add egg and mix thoroughly. Sprinkle with flour and mix till coated. 
  3.  Deep-fry in boiling oil over high heat. 
  4.  Drain well
  5.  Heat butter till bubbling and lightly brown. Add curry leaves and chilli. Fry over medium  heat till fragrant.
  6. Reduce heat to low. Add cereal mix in. Stir till lightly golden. 
  7. Add prawns and toss till well mixed, turning off heat as cereal turns fully golden brown.
  8. Taste and adjust seasoning if necessary. 
  9. Plate and serve



You may opt to add salted egg yolk with the cereal mix for a change of taste.
