Shrimp paste crispy fried chicken 蝦醬雞

Another easy and simple recipe of frying tasty chicken wings if you are sick of the usual fried chicken.
This is good with beer too!!

Ingredients:
  • chicken mid joint wings
  • 2 tbsp shrimp paste
  • 3 tbsp Kentucky fried powder or all purpose fried powder
  • 3 tbsp plain flour
  • 2 tbsp cornstarch powder

Methods:

  1. Marinate chicken wings with shrimp paste in advance for an hour
  2. Heat cooking oil over high heat in a non stick wok
  3. Mix the cornstarch powder, all purpose seasoned fried flour and plain flour together
  4. Coat mid joint wings with the mixture and fry in the hot oil
  5. Once chicken wings turned cripsy outside, lower the heat to further cook the meat  inside
*After many times trial and error, we discovered that the chicken wings can be nicely fried only with  mixture of three flours and not either one less.
