Pickled sour mustard with pork belly

So glad my eventful week has come to an end; kicked off with a few crazy enthusiastic buddies celebrating my bday way in advance. They just can't wait for that glorious day to come when they knew I could no longer find any reason not to go drinking with them. As the matter of fact, I was never a party animal, looks can be deceiving.  Well hiyah...don't bother to explain .... anyway nothing beats a nice relaxing day at my cosy home with Siara and usual cooking routine. So I chose to celebrate my actual bday at home cooking a few simple dishes, blowing candles with my loved ones. 
So cheers!!

Ingredients:

  • pork belly
  • pickled mustard 
  • 1 tbsp of sugar
  • half cup of water 


Cooking method:
  1. wash and rinse sour pickled mustard for a few times
  2. Slice it thinly
  3. Wash the pork belly
  4. Slice and cut as shown in the pic
  5. In a pan without any oil, stir fry the ground pork till golden brown
  6. Drain away some oil ( you will freak out with the amt of oil derived from the pork fats)
  7. With leftover oil, stir the pork with the pickled mustard 
  8. Add sugar and water 
  9. Let it  simmer and cover with a lid 
  10. Slice off  blue chop marked on the skin,  
  11. Serve 
*Pickled mustard tastes salty and sour thus no need to add any salt.
* Alternately you may add XO sauce if you like to spice it up
