Creamy wild mushroom soup





Tonight dinner is a simple lazy dinner.
Woke up late after taking a short nap; jet-lagging from London. I need to cook fast!! Bought two boxes of huge fresh mushroom from Sainsbury's for just 1 pound each. Thus decided to cook mushroom soup and garlic bread, easy peasy quick simple meal!!







Ingredients:
  • ounces mushrooms ( sliced or cubed)
  • medium onion (optional)
  • gloves of garlic (sliced)
  • ounce butter
  • pint chicken stock
  • tablespoons flour
  • 1/4 pint whole milk
  • fresh ground salt & pepper
  • minced parley leaves
  • some thyme leaves for garnishing

Directions:



  1. Add mushrooms for a further 4 minutes.Fry garlic and onion in the butter for 2 minutes.
  2. Sprinkle flour into pan and stir well to remove lumps.
  3. Add half of the stock.
  4. Let it boils for about 5 minutes
  5. Add half the milk stirring all the time.
  6. Continue to add stock and milk in turn until all added.
  7. Adjust seasoning and add plenty of pepper.
  8. Sprinkle minced parsley or even basil leaves
  9. Simmer very gently for 20 minutes.
  10. Garnish with thyme leaves
