Miso Pork Rib with egg plant


Am a working mum with busy traveling schedule who still enjoys cooking for my family ;) 
Create simple recipes that use readily available ingredients in most home kitchen. 
Hope my recipes will inspire more working mothers to cook for their love ones! Cheers!!

Prep time 5 mins/ cook time 35 mins / makes 4-5 pax


2 racks of pork ribs~ cut in small rib size
1 tbsps of rice wine or mirin wine
2 tbsps of Miso paste

Handful of chopped garlic n shallot
2 tbsps of sweet dark soya sauce or ABC ketchup manis
Small cup of rock sugar
Eggplants (Aubergines)
Kaffir Lime leaves~ few pcs and cut stripe (optional)
XO chilli paste (optional)


Step 1 (prep)
Use hot boiling water to rise the rib before marinating.
Marinate the pork rib with miso paste, chop garlic n shsllot and 1 tbsp of dark sauce & wine. Set aside for an hour or over night in fridge.

Step 2 (cooking)
●pour little oil in the pan & throw in the kaffir lime leaves
●Then pour in the pork rib to pan fry to seal the juice,
●When the ribs are in golden brown,add water to cover all the meat, throw in the rock sugar,
●Cover the pot lid n bring to boil on medium fire for 20mins. In between stir a few times to prevent burn,
●20mins later, throw in the eggplant and boil for another 10mins
●Open the lid n add another tbsp of dark sauce/ ABC ketchup manis, let the sauce thicken and stir in the Chilli paste.
●Plate to serve
